HOMEMADE PITA BREAD 
4 c. flour
1 1/2 tsp. salt
1 tsp. sugar
1 pkg. dry yeast
1 3/4 c. water
2 tbsp. peanut oil
1 c. flour

Mix 4 cups flour, salt, sugar and yeast in a bowl. Combine water and peanut oil in small saucepan. Heat to 125 to 130 degrees. Stir into flour mixture. Add just enough of the remaining 1 cup of flour to make soft dough. Knead on floured surface for 8 to 10 minutes or until smooth and elastic. Let rest, covered for 10 minutes. Divide into 12 portions. Roll each portion into 5 inch circles on floured surface. Place on wire racks on baking sheets. Bake at 500 degrees for 5 minutes. Makes 12 pitas.
