MOM'S CASHEW COOKIES 
1/2 c. butter
1 c. brown sugar, firmly packed
1 egg
1/2 tsp. vanilla
2 c. sifted flour
3/4 tsp. baking powder
1/4 tsp. salt (may be omitted)
1/3 c. dairy sour cream
1 3/4 c. salted whole cashews

Cream butter and sugar until fluffy. Beat in egg and vanilla. Add sifted dry ingredients alternately with sour cream; mix well. Carefully fold in nuts. Drop on greased cookie sheet. Bake at 400 degrees for 10 minutes.

FROSTING:

1/2 c. butter
3 tbsp. coffee cream (light whipping cream)
1/4 tsp. vanilla
2 c. sifted 4X sugar

Brown butter until caramel color. (Watch closely so it does not burn.) Remove from heat. Add other ingredients; beat until smooth and thick. Frost cookies. After frosting, place half cashew on top for decoration.
