CASHEW BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 c. cashews, whole or halves
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Line cookie sheet with foil; lightly butter.

In 8-cup microwave-safe bowl, combine sugar and corn syrup. Microwave on 100% power for 4 minutes; stir.

Add cashews; blend well. Microwave on 100% power 3 1/2 to 4 1/2 minutes or until mixture is light brown; stir in butter and vanilla. Microwave on 100% power for 1 minute.

Add baking soda; stir quickly to blend. Pour immediately onto prepared cookie sheet; quickly spread with wooden spoon. Cool. Break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
