MANDARIN JELLO SALAD 
1 can crushed pineapple, drained (sm. can)
1 sm. pkg. orange Jello
1 lg. can mandarin oranges, drained
1 c. hot water
1 c. pineapple juice
1 (8 oz.) cream cheese
2 tsp. pineapple juice

Dissolve Jello in hot water. Add pineapple juice and allow to partially jell. Mix cream cheese and 2 teaspoons pineapple juice until smooth. Mix in partially jelled Jello. Add drained crushed pineapples and mandarin oranges. Allow to completely jell. Can garnish top with a few mandarin oranges.
