CHEESY CORN CHOWDER | |
2 1/2 c. water 3 c. chopped potatoes, unpeeled 1/2 c. diced carrots 1 c. finely chopped celery 1/2 c. finely chopped green onion 1 1/2 tsp. salt 2 tbsp. parsley flakes 1/2 c. butter 1/2 c. flour 2 c. half and half (or milk) 1 lb. Velveeta cheese 1 pkg. frozen premium corn (approx. 2-3 c.) Combine first six ingredients in large kettle and bring to a boil. Simmer for 10 minutes. Add butter, flour, half and half, and cheese. Cook for 3-4 minutes or until cheese is almost melted. Add frozen corn and parsley flakes and heat through. Serve with cornbread for a delicious meal. |
