CHEESE LOG 
Remember to use equal portions of your cheese (like 1 pound of each).

Jarlsberg imported cheese or Black Swiss cheese
Blue cheese
Cheddar cheese, aged New York state sharp
Cream cheese, I use soft cream cheese

In a large mixing bowl grate Jarlsberg or Swiss, grate cheddar, crumble blue cheese and add cream cheese.

I let mine sit out overnight at room temperature to soften. The next morning I add 1 tablespoon mayonnaise, dash or 2 of Worcestershire sauce, dash or 2 of Tabasco sauce, and mix.

Cut 2 large sheets of foil and place on counter. Cut 2 large sheets of wax paper and place on foil. Sift paprika generously on wax paper. Half your cheese mixture and place each on top of paprika and roll until covered in paprika. Roll should be the diameter of a Ritz crackers. Roll in crushed toasted pecans, a cup for each roll. Roll up and twist ends and place in refrigerator.
