CARAMEL APPLE CAKE 
CAKE:

1 1/2 c. oil
2 c. sugar
3 eggs
3 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla
1 c. chopped pecans
3 lg. apples, peeled and chopped in sm. pieces

GLAZE:

1/2 c. butter
1/2 c. light brown sugar
2 tbsp. milk

Combine oil, sugar, and eggs and beat for 3 minutes at medium speed of electric mixer. Add flour, salt, soda, and vanilla. Fold in apples and pecans. Bake in greased and floured tube pan at 325 degrees for 1 hour and 20 minutes. Cool 20 minutes. Remove from pan. Top with glaze.

To prepare Caramel Glaze: Combine butter, milk, and sugar in saucepan. Bring to a boil, then simmer for 20 minutes, stirring often.
