SARDE A BECCAFICU 
2 1/2 lbs. fresh sardines
1 1/2 c. bread crumbs
2 tbsp. minced parsley
1 sm. onion, minced
1/4 tsp. salt
1/4 tsp. pepper
4 tbsp. olive oil
1/3 c. Parmesan or Romano cheese

Remove heads, tails, and backbones from sardines. Rinse well with cold water; drain and dry with paper towels. Split bellies open so that each sardine is in one flat piece (butterfly style). In a bowl, combine bread crumbs, cheese, parsley, onion, salt, pepper, and 2 tablespoons oil. Spread bread crumb mixture over butterflied sardines. Roll up carefully and place in slightly greased baking pan. Place in 350 degree oven and bake for 15 to 20 minutes or check for taste. Handle carefully in serving. Serves for 6 to 8.
