DOUBLE DAIRY BARS | |
1/2 c. butter, softened 2 c. firmly packed brown sugar 2 eggs 1 tsp. vanilla 1 1/2 c. unsifted flour 1 tsp. baking soda 1 tsp. salt 2 c. uncooked quick oats FILLING: 1 (14 oz.) can sweetened condensed milk 1 (8 oz.) pkg. cream cheese 1 tsp. vanilla 1 c. chopped walnuts FROSTING: 2/3 c. semi sweet chocolate bits 1/3 c. filling 2 to 3 tbsp. milk, if needed to thin to spreading consistency Beat butter, sugar, eggs and vanilla in a medium size bowl until well blended. Stir in flour, soda, and salt until smooth; stir in oats. Spread mixture over bottom of 17 x 11 x 1 inch ungreased jelly roll pan. To make filling: Beat condensed milk, cream cheese and vanilla until smooth; measure out and reserve 1/3 cup of this mixture for frosting. Spread the rest over oatmeal mixture in pan; scatter nuts evenly on top. Bake at 350 degrees for 25 minutes or until top is lightly browned and springs back when lightly touched. While bars bake, prepare frosting. Place chocolate pieces and reserved filling in small saucepan. Heat, stirring constantly, over very low heat until mixture is smooth. If too thick, add a little milk to thin. As soon as bars come from oven, drizzle or spread frosting over surface. Cool to room temperature before cutting. |
