URSULA'S ZUCCHINI CASSEROLE 
This is a very good party dish. It can be made a day before and baked when needed.

1 1/2 lb. yellow squash or zucchini
1 med. onion, chopped fine
2 tbsp. and 1/4 lb. butter
1 c. sour cream
1 (10 3/4 oz.) can cream of chicken, mushroom, or celery soup, undiluted
2 carrots, grated
1 (2 or 4 oz.) jar pimentos, chopped
1 (8 oz.) pkg. herb stuffing, divided

Cook, drain, and mash zucchini. Season to taste. Saute onion in 2 tablespoons butter and add to squash. Combine soup, sour cream, carrots, and pimento and add to zucchini.

Melt the 1/4 pound butter and combine with stuffing mix. Spread half the stuffing mix in bottom of pan and spoon vegetable mixture over it. Cover with the remaining stuffing mix. Bake at 350 degrees for 25 minutes.
