SLOPPY FRANKS 
3 lb. frankfurters, cut into 1/4" slices
3 c. diced celery
1 1/2 c. salted peanuts
1 c. diced green pepper
6 hard boiled eggs, diced
1/4 c. plus 2 tbsp. minced onion
1 tbsp. salt
2 c. mayonnaise
48 slices Cheddar cheese
48 frankfurter buns, split & buttered

Set oven at broil and/or 550 degrees. Mix all ingredients except cheese and buns. Cut cheese slices into halves; place one on each bun half. Broil halves 4-5 inches form heat 2-3 minutes or until cheese is melted and buns are toasted. Spread frank furter mixture on bottom halves of buns; top with remaining halves. 48 servings.
