CALIFORNIA FLANK STEAK 
1 1/2 lb. flank steak
1 lg. onion, sliced
1 tsp. grated lemon peel
1/2 c. lemon juice
2 tbsp. sugar
1/4 c. vegetable oil
1/2 tsp. oregano
1/8 tsp. black pepper
2 tbsp. soy sauce
1 tbsp. butter

Score steak 1/8 inch deep with sharp knife on both sides in a diamond design. Lay 1/2 onions in shallow dish. Place steak on top. Cover with remaining onions.

Combine remaining ingredients except butter. Pour over steak. Cover. Marinate in refrigerator 3 hours or overnight. Turn occasionally.

Place steak on broiler rack 2-3 inches from heat (reserve onions). Broil about 3 minutes per side. Flank steak will be more tender kept rare.

Meanwhile saute onions in butter in small fry pan until soft. Cut steaks across grain on diagonal in thin slices. Serve with onions. Serves 4. Prep time: 20 minutes. Carefree time: marinating time.
