BAKED BROWN RICE 
Cooking spray
3 c. chicken bouillon
1 c. uncooked brown rice
1 (8 oz.) can water chestnuts, drained
1 c. low-fat plain yogurt
1 tbsp. chopped hot peppers, seeded
1 tbsp. hot pepper liquid or hot sauce
1 1/2 c. shredded cheese
Paprika

Spray 2 quarts casserole with cooking spray. Boil chicken bouillon and add rice. Cover; lower heat and cook for 45 minutes until liquid is absorbed. Combine rice, chestnuts, yogurt, pepper, and liquid in large bowl. Pour half of mixture in and sprinkle 3/4 of cheese over. Repeat layers with remainder of rice and cheese. Bake for 30 minutes, uncovered, in 350 degree oven.
