OVEN SCRAMBLED EGGS (50) 
50 eggs
1 1/4 qt. milk (hot)
1 1/3 tbsp. salt
1 c. butter, melted

Beat the eggs slightly. Add milk and salt; mix well. Pour butter into baking pans (16 1/2 x 10 1/2 x 2 1/2 inches). Use 1/2 cup per pan. Add the egg mixture (about 2 quarts per pan). Bake at 350 degrees for about 40 minutes, stirring once after 20 minutes of baking.

Variations:

Eggs and Cheese; reduce quantity of eggs to 40 and add 1 pound (1 quart) grated cheese.

Eggs and Dried Beef: Reduce quantity of eggs to 40 and add 12 ounces dried beef (chopped)

Eggs and Ham: Reduce quantity of eggs to 40 and add 3 cups chopped cooked ham.
