ZUCCHINI CASSEROLE 
1 1/2 lb. zucchini, cooked
4 eggs
1/2 c. milk
1 lb. Jack or mozzarella, grated
1 tsp. salt
Dash pepper
2 tsp. baking powder
3 tbsp. flour
1/2 c. bread crumbs
butter
Bacon bits
French fried onion rings (canned)

Preheat oven to 350 degrees. Wash zucchini cut into 1/2 inch slices. Cook in little water approximately 5 minutes, drain well, tilt pan and blot with paper towels if necessary. Cool.

Beat eggs, milk, cheese, salt, pepper, baking powder and flour together. Add zucchini to pot, mix. Place in buttered 2 quart casserole. Sprinkle with bread crumbs and crushed onion rings. Dot with butter. Bake 35-40 minutes.
