ERIC'S CHORI-QUESO | |
This recipe is for preparation of 1 chorizo. Just double for two, triple for three, etc. One chorizo fills two tortillas, two chorizos fills four, three chorizos fills six, etc. 1 pkg. Chorizo (5-6 sausages) 1 pkg. Mexican "fiesta" blend cheese 1 pkg. corn tortillas (1 chorizo fills 2 tortillas). 1 whole fresh lime Tequila, if desired (or water) Slice open 1 chorizo and remove from skin. Crumble chorizo into frying pan. Add 1 tablespoon of tequila or water if alcohol is not desired. Brown chorizo (about 8-10 minutes on medium high). Once brown put a handful of Mexican blend cheese on top of the chorizo until it melts. Spoon filling on the corn tortillas. Squeeze lime wedge on top. Note: Serve and eat immediately when cheese melts for best taste! If you want to get fancy you can add a slice of avocado or fresh chopped cilantro and onion. Tweak to taste! Submitted by: Eric |
