MOCK POTATO SALAD 
4 c. cauliflower broken into florets
1/2 green pepper, chopped
2 sm. rib celery, chopped
1/2 dill pickle, chopped
Bacon bits; optional
1 sm. jar diced pimentos
1 tbsp. instant onion flakes
4 tbsp. reduce calorie mayonnaise
2 tsp. prepared mustard
Dash of garlic powder
Salt and pepper to taste

Rinse cauliflower and break into florets. Place in saucepan. Cover with water and cook on medium heat to 10-15 minutes or until tender crisp. Turn into large strainer and rinse well under cold running water. Drain.

Combine cauliflower, green pepper, celery, pickles, drained pimentos, and onion flakes. Mix gently.

Combine mayonnaise, mustard, garlic powder, and mix gently into the combined vegetables. Add salt and pepper and sprinkle with bacon bits if used.
