NOODLES AND PEPPERS WITH GINGER
AND SCALLIONS
 
3 qt. plus 1/4 c. water
8 oz. fresh thin noodles, like angel hair
1" long piece fresh ginger
4 scallions, trimmed & cut in thirds
2 tsp. Chinese sesame oil
2 tsp. reduced-sodium soy sauce
1 tbsp. oyster sauce
1 yellow, red or purple pepper, cored, seeded, coarsely chopped

1. Bring 3 quarts water to boil in covered pot. Add noodles and cook according to package directions. Drain.

2. With food processor on, put ginger through feed tube and mince.

3. With food processor on, add scallions through feed tube and process until coarsely chopped.

4. Dry pan in which noodles were cooked and heat oil. When oil is hot, stir in ginger and scallions and cook briefly, about 1 minute, stirring.

5. Remove from heat and add soy sauce, oyster sauce and remaining 1/4 cup water, stirring.

6. Stir in noodles and pepper and stir to coat well. Yield 2 servings.
