MY SPECIAL MEATLOAF 
2 lb. ground beef
2 lg. carrots, grated
1 pkg. onion soup mix
1/2 lb. grated Swiss or Cheddar cheese

Combine all ingredients, using only 1/2 of the cheese. Make large meatloaf. Hollow out center. (Save extra meat for later.) Mix a package of your favorite stuffing. Fill center of meatloaf with stuffing. Top with remaining cheese. Cover top of meatloaf with remaining meat. Bake at 350 degrees for 2 hours or in crockpot on low for 10 hours.
