PEACH STREUSEL PIE 
1/2 c. light brown sugar
1/2 c. unsifted all-purpose flour
1/2 c. butter
2 lb. ripe peaches
1/2 c. granulated sugar
1/4 tsp. nutmeg
1 egg
2 tbsp. light cream
1 tsp. vanilla
9" unbaked pie shell

In bowl, combine brown sugar and flour; mix well. With pastry blender cut in butter until mixture is like coarse crumbs. Preheat oven to 400 degrees. Wash peaches, peel and discard pits. Measure 4 cups peaches. Sprinkle 1/2 cup crumb mixture over bottom of pie shell. Add peaches. Sprinkle with granulated sugar and nutmeg.

Beat together the egg, light cream and vanilla. Pour over peaches. Cover with the remaining crumb mixture. Bake 40-45 minutes or until top is golden brown all over. Cool. Serves 6.
