MAGIC PUFF SANDWICHES 
1 1/2 c. Bisquick
3/4 c. mayonnaise
1 egg
6 slices Italian bread
1 of the following variations

ITALIAN VARIATION:

3 1/3 to 4 oz. sliced pepperoni, cut up
2 c. shredded Mozzarella cheese
1/2 c. sliced ripe olives
1/2 c. chopped green pepper
1/2 c. chopped onion, sauteed
1/2 tsp. Italian seasoning
1/4 tsp. garlic powder

MEXICAN VARIATION:

2 c. (8 oz.) Monterey Jack cheese, shredded
1 (4 oz.) can green chiles, drained, seeded, and chopped
1/2 c. onion, chopped
1 tbsp. chili powder

CHICKEN VARIATION:

1 c. chicken, cooked and cut up
2 c. Cheddar cheese, shredded
1 (4 oz.) can mushroom stems and pieces, drained
1/4 c. green onion, sliced
1/4 tsp. salt
1/16 tsp. pepper

Mix Bisquick, mayonnaise, and egg together. Add the ingredients from the variation of your choice (Italian, Mexican, or chicken). Spread mixture on Italian bread slices. Bake in a 450 degree oven on an ungreased cookie sheet until puffy and golden brown, about 10 minutes.
