POLYNESIAN PUDDING 
2 c. cold boiled rice
1/2 tsp. vanilla
1/2 c. sugar
20 miniature marshmallows
1/2 c. chopped nuts
1/2 c. drained crushed pineapple
1 env. whipped topping mix

Combine rice, sugar, vanilla, marshmallows, nuts and crushed pineapple. Set aside. Whip one package topping mix according to directions. Place in refrigerator to chill at least three hours before serving.
