HOT CHICKEN SALAD 
3 c. cooked chicken or turkey
1 can cream of mushroom soup
2 tbsp. chopped onion
1 c. diced celery
1/2 c. mayonnaise
1/4 tsp. black pepper
1 tbsp. lemon juice
1/2 c. Ritz cracker crumbs
Chinese noodles for topping, if desired

Mix all ingredients except crumbs and noodles. Place ingredients in a greased casserole and top with crumbs and noodles, if using. Bake in a preheated 350 degree oven for 30 minutes. Serves 4-6.
