BROCCOLI CHEESE CASSEROLE 
2 (10 oz.) pkgs. frozen broccoli
1/2 c. sour cream
2 whole eggs
1 can cream of mushroom soup
3 tbsp. chopped onion
2 1/2 c. shredded sharp cheddar cheese
1 c. bread crumbs
1/2 stick butter
Salt & pepper to taste

Boil broccoli 5 minutes and drain well. Beat eggs; stir in sour cream, mushroom soup, onions, cheese and salt and pepper. Fold in cooked broccoli. Place entire mixture in 2 quart casserole dish. Bake, uncovered for 40 minutes at 375 degrees.

TOPPING: Melt butter and add bread crumbs. Stir until golden. Sprinkle on top of casserole and serve. Serves 4 to 6.
