4 eggs 1 c. sugar 3 tsp. baking powder 1 c. cooking oil 4 c. flour Beat eggs slightly. Add other ingredients in order given. Refrigerate several hours. Roll into balls size of walnuts. Bake at 350 degrees for 15 to 18 minutes. Cool. Scoop out center of cookies (these cookies may be frozen, then thawed when ready to fill). When filled must be refrigerated. FILLING: 1 can Thank You Brand Vanilla Pudding flavored with 1 teaspoon rum extract. Fill center of all cookies. Press 2 cookies together to form a ball. Let set a few moments. Make a bath of 1 cup Vermouth and 1/4 teaspoon red food coloring. Dip each cookie in bath. Drain on rack. When cookies are drained but not dry, roll in granulated sugar. Add a sliver of green cherry for stem and use gold or silver leaves. |
