1 stick butter 2 lg. white onions 2 lb. lean ground beef 4 tsp. chili powder 3 tsp. salt 2 cans stewed tomatoes, including juice 2 cans red kidney beans, including juice 14 oz. bottle catsup Take a 4 quart saucepan, put on low heat and melt butter. While this is melting, chip onions into the pot. Put the lid on and let them simmer until they are well cooked and shiny. Crumble ground beef into pot, brown well, mixing it with onions. When the meat is brown, sprinkle over it chili powder and mix again. Add salt and a touch of black pepper. Add tomatoes and juice. Chop them into pot and bring to a boil. Add kidney beans and bring to boil. Add catsup. Simmer 1 hour, stirring regularly. Serves 6-8. |
