STUFFED SHRIMP OR PATTIES 
2 1/2 lbs. cleaned lg. to med. shrimp
3/4 loaf bread, broken up
3/4 c. chopped celery
1/2 bell pepper, chopped
1/4 c. chopped parsley
1/4 c. green onions, chopped
3 eggs
1 1/2 c. chopped onions
Salt and pepper to taste

Beat eggs. Add broken bread. Mix chopped vegetables with egg and bread mixture and season to taste. Shrimp tails will have to be split. Lay shrimp tail opened and add about 1 large tablespoon bread mixture to each tail. Roll in seasoned flour. Fry in oil 375 degrees until brown.

NOTE: For patties, chop or grind shrimp and vegetables. Mix as above recipe, but, form into patties, roll in seasoned flour and fry as above. Drain on paper towel.
