APPLE DAPPLE CAKE | |
CAKE: 1 1/2 c. cooking oil 2 c. sugar 2 tsp. vanilla 3 eggs 3 c. flour (measure before sifting) 1 tsp. baking soda 1 tsp. salt 1 c. chopped pecans (or other nut meats) 3 c. fresh chopped apples TOPPING #1: 1 c. brown sugar 1/4 c. sweet milk 1/4 lb. butter TOPPING #2: 1/2 c. cream 1/2 c. butter 1 c. brown sugar 1 tsp. vanilla Mix first 3 ingredients, add eggs and mix. Add all this to sifted flour mixture. Fold in chopped pecans (other nut meats may be used) and chopped apples (I like Winesap or Stayman). Cook in a tube pan at 325 degrees for 1 hour and 15 minutes. Mix all ingredients together in a heavy saucepan. Cook 3 minutes after it starts boiling. Pour over cake slowly, making holes with knife or other pointed instrument so it will soak in. (Use either topping #1 or #2.) This cake is very good cooked in a square pan - using no topping. |
