APPLE BEIGNETS 
1 c. flour
3/4 c. milk
2 eggs, slightly beaten
1 tbsp. butter, melted
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. vanilla
3 lg. tart apples
Oil for frying
6 tbsp. cinnamon sugar
6 tbsp. chopped walnuts
6 scoops vanilla (or cinnamon) ice cream

Make batter: Stir together flour, milk, eggs, butter, lemon juice, salt and vanilla. Let mixture stand at room temperature for 1 hour.

Core apples and cut each into 1/4 inch doughnut-shaped slices. Pour oil to depth of 1/4 inch in large skillet. Heat oil. Dip 6 apple slices in batter and cook in hot oil until brown (turning once). (Apples should remain firm.) Drain apple slices on paper towels. Repeat with remaining slices. Place 2 warm slices on each serving dish. Top each serving with 1 tablespoon cinnamon sugar, 1 tablespoon chopped nuts and a scoop of ice cream. Serves 6.
