WHOOPIE PIES 
1/2 c. oil
1 c. milk
1 1/2 tsp. baking soda
1/2 c. cocoa
1 c. sugar
1 tsp. vanilla
1/2 tsp. baking powder
1 egg
2 c. flour
1/2 tsp. salt

Mix all of the ingredients together in a bowl. Stir well or beat with a mixer until all ingredients are blended. Drop by teaspoon on an ungreased cookie sheet. Bake 5 to 7 minutes at 425 degrees. While the cookies are baking, prepare the filling (below).

FILLING:

1/2 c. shortening
1 c. marshmallow whip
1 c. powdered sugar
1/2 tsp. vanilla

Combine all ingredients. Dilute with milk a tablespoon at a time until moist (usually 5 tablespoons). Put between 2 cookies for filling. I usually double the filling for the same amount of cookies. These are good frozen and used in lunches.
