MEATBALLS WITH MUSHROOM GRAVY 
1 lb. ground beef
1 egg
1 tbsp. chopped celery leaves
1 tbsp. chopped onion
Salt & pepper to taste
1 handful of fine, moist bread crumbs
1 can cream of mushroom soup
1/2 can milk

Put egg in mixing bowl and beat with fork. Add ground beef, celery leaves, onion, bread crumbs, salt and pepper. Mix thoroughly, shape into meatballs and brown in skillet. The more completely your brown the meatballs, the better the gravy and less time you have to simmer.

When the meatballs are completely browned, add mushroom soup and milk. Stir until soup and milk are dissolved and mixed. Cover and simmer over low heat for 20 to 30 minutes. Watch gravy, you might have to add a little water. Serve over rice, noodles, etc.
