SWEET AND HOT STIR FRY 
1 1/2 lbs. chicken or beef for stir fry
4 green onions or 1/2 med. onion
1 pkg. bean sprouts
1 pkg. snow peas
1 sm. pkg. sliced mushrooms
3 tbsp. peach or apricot preserves or jelly
Soy sauce
Crushed red pepper
2 tbsp. red wine vinegar
2 tbsp. cornstarch

Begin cooking onions in olive oil, add soy and meat and mushrooms and let simmer.

Stir together - preserves, 3 tablespoons soy sauce and 1/8 teaspoon crushed red pepper. (Add more pepper for a SPICY meal).

Stir together (in separate container) - then above 2 tablespoons vinegar and 2 tablespoons cornstarch. Add beans sprouts, snow peas and preserve sauce. Simmer for 3 to 5 minutes or until vegetables are cooked to desired tenderness. Then add vinegar sauce and stir until all sauces begin to thicken. Serve over white rice.
