BEEF BECHAMEL 
2 c. thinly sliced onions
1/4 c. butter
3 lbs. round steak, cut into bite-size pieces
1 tsp. paprika
1 tbsp. salt
1/4 tsp. marjoram
1/4 tsp. thyme
1 pt. sour cream
1 c. sliced mushrooms
1 tbsp. of angosture bitters

Saute onion in butter until tender. Remove from pan. Dust beef with flour, and brown in butter in same pan. Add onion, water and seasoning. Cover and simmer slowly for 1 1/2 hours. Add more water if needed at serving time. Add sour cream, mushrooms (sauteed in butter) and bitters. Heat but do not boil. Serve over brown rice.
