BLUEBERRY MUFFINS 
2 c. flour
4 tsp. baking powder
1/4 tsp. salt
1 1/2 tsp. cinnamon
1/3 c. sugar
3 1/2 c. bran flake cereal
1 3/4 c. skim milk
2 egg whites
3 tbsp. vegetable oil
1 1/2 c. blueberries, fresh or frozen, unthawed

Stir together flour, baking powder, salt, cinnamon and sugar; set aside.

Combine bran flakes and milk into large mixing bowl; let stand 2 minutes or until cereal is softened. Add egg whites and oil; beat well. Add flour mixture, stirring only until combined; gently stir in blueberries. Put batter evenly into 12 muffin pans coated with vegetable spray. Bake 400 degrees for 23 minutes. Serve warm.
