1 med. sized potato
1 sm. pkg. coconut
1 sq. unsweetened chocolate
1 lb. confectioners' sugar
1 tsp. vanilla

Boil and mash potato. Beat in the sugar. Add coconut and vanilla. Beat well. Spread out quite thin on waxed paper. Melt chocolate and spread on top. Cut in squares. Very good.
