GARAM MASALA 
1 c. cumin seeds
2 tbsp. coriander seeds
1 tbsp. black cardamom
1 tbsp. black peppercorn
1 tbsp. green cardamom
1 tbsp. ginger powder
20 sticks cinnamon (1 inch each)
2 tsp. cloves
2 tsp. mace
20 bay leaves
2 tbsp. nutmeg

Put all ingredients in a coffee grinder and blend to a fine powder. Sieve and store in a clean, dry, airtight container.
