EGGPLANT CASSEROLE 
2 eggplants
2 cans tomato sauce
1 lb. shredded sharp cheese
Salt and pepper as needed to make spicy
Red peppers as needed
Jalapeno peppers (optional)
Cilantro or parsley for flavor (optional)
A little bit of lemon (optional)

Slice eggplant in round slices. Use Corning Ware dish as large as you have. Put some tomato sauce in bottom. For first layer, put in eggplant, some cheese, pepper and salt as needed.

For second layer, use eggplant pieces, sliced and put in tomato sauce, cheese, peppers, salt. Cook at 250 degrees for 30 minutes. You will smell cheese melted and ready to eat. Take out of oven and enjoy.
