FESTIVE FRUIT PIE 
1 (8 oz.) container whipped topping, thawed
1 (0.9 oz.) pkg. instant banana pudding mix
1/2 c. skim milk
1 pie crust shell, baked
Any fruit: Strawberries; halved grapes; mandarin oranges; kiwi, peeled and sliced; or an apple, cored and sliced
2 tbsp. honey
2 tbsp. sugar
1/2 tsp. freshly squeezed lemon juice

In a small mixing bowl, beat whipped topping, pudding mix and skim milk until well combined. Pour into baked pie shell. Arrange fruit on top as desired. Use whatever fruit you like.

In a small saucepan, combine honey, sugar, and lemon juice. Bring to a boil, stirring until sugar is dissolved. Cool slightly and brush over fruit. This keeps fruit from turning brown. Serve immediately or refrigerate. Makes 6 servings.
