HOT GERMAN POTATO SALAD 
4-6 strips bacon
6 med. potatoes, cooked & cubed
1 sm. onion, diced
2/3 c. water (from cooking potatoes is best)
1/3 c. vinegar
1 egg, beaten
2 tbsp. sugar
1 tbsp. flour
1/2 tsp. dry mustard
Pinch of salt

Fry bacon, crumble over cubed potatoes. Sprinkle with onions. Mix sugar, flour, mustard and salt. Pour into bacon grease. Add water and vinegar. Stir until smooth. Simmer until slightly thick. Add beaten egg. Stir until smooth. Pour over potatoes. Cover and keep warm. Do not serve cold.
