APPLE CAKE 
2 c. flour
2 c. sugar
2 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. oil
4 eggs
1 tsp. vanilla
3 finely chopped (peeled) tart apples
2 c. chopped walnuts

In large bowl combine flour, sugar, soda, cinnamon, oil, eggs and vanilla. Beat at medium speed until well mixed. Stir in apples and nuts. Turn into bundt pan (well greased). Bake at 350 degrees 60-65 minutes. Cool in pan 10 minutes. Sprinkle with confectioners' sugar.

BARS:

Halve recipe. Bake in greased 13x9x2 inch pan 40 minutes at 350 degrees. Cool 10 minutes. Cut into bars. Sprinkle with confectioners' sugar. Makes 24.
