JANET'S COQ AU VIN 
3 tbsp. olive oil
2 carrots, sliced
3/4 c. chopped onions
1 clove garlic
1 chicken, cut in pieces
2 tbsp. flour
2 tbsp. parsley
1 tbsp. marjoram
1/2 tsp. thyme
1/2 bay leaf
Pepper
1 1/2 c. red wine
8-10 mushrooms, sliced

Brown onion, carrot, garlic in olive oil in large frying pan. Push aside and brown chicken pieces on both sides. Mix together flour, parsley, marjoram, thyme, bay leaf, pepper. Sprinkle mixture over chicken. Add red wine. Reduce heat; cover and simmer for an hour. Add mushrooms last 5 minutes.
