OATMEAL BLUEBERRY MUFFINS 
1 1/4 c. flour
1 c. quick oats
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 egg, slightly beaten
1/2 c. water
1/2 c. oil
1 c. blueberries, drained, thaw if frozen

In large bowl stir together flour, oats, sugar, baking powder, soda and salt; set aside. In small bowl mix egg, water and oil. Add all at once to oat mixture, stirring just until moistened. Stir in blueberries. Spoon into greased muffin cups 2/3 full.

Blend 2 tablespoons sugar and 1/4 teaspoon cinnamon. Sprinkle over batter. Bake in 400 degree oven for 18-20 minutes. Makes 1 dozen muffins.
