BASIL SALAD 
1 head lettuce or spinach
1 lg. bunch fresh basil, washed & chopped
1/2 c. olive oil
3 cloves minced garlic
4 oz. prosciutto, ham or meaty bacon
1/4 c. vinegar
1/2 c. pine nuts or walnuts
Salt & pepper to taste
1/4 c. grated Parmesan or Romano cheese

Wash lettuce/spinach. Toss with basil and set aside. Heat oil in a saute pan. Saute garlic and prosciutto until garlic is golden, about 2 minutes. Add 1/8 cup vinegar. Add nuts and cook a minute more. (Watch for pine nuts, they burn easily.) Season with salt and pepper; pour over greens. Sprinkle with grated cheese. Makes 6 servings.
