POTATO AND BROCCOLI SOUP 
1/2 to 3/4 lb. bacon
6 lg. potatoes, diced
1 med. onion, diced
1 to 1 1/2 qts. water
Salt and pepper
1 bunch broccoli or 2 (10 oz.) pkg. frozen, chopped
1 stick butter
1 can evaporated milk
8 oz. Cheddar or American cheese, shredded
1/2 c. Parmesan cheese

Chop and fry bacon, add potatoes, onion, broccoli and water. Make sure water covers vegetables by at least an inch. Cook until tender, salt and pepper to taste. Add milk and cheeses. Simmer until it thickens.
