BLACKENED FISH | |
2 (7 oz.) skinned fish fillets 1/2 tsp. cayenne pepper 1/2 tsp. black pepper 1/2 tsp. thyme 1/2 tsp. garlic powder 1/2 tsp. onion powder 1/2 tsp. celery salt 1 tbsp. sweet paprika 1 tbsp. salt 1 stick melted butter Heat a large cast iron skillet (dry, no oil) on your hottest fire. Get it as hot as you can. Mix the spices together then combine them with butter. Pass the fillets through the butter. Then cook the fish 2 at a time for about 90 seconds on each side. Serves 2. If your fillets are thick cook about 3 to 4 minutes on each side to make sure it's done. It is better to cook this outside as it will smoke up your house. |
