SUNSHINE PARFAITS 
4 c. water, divided
1 box orange flavored Jello
1 box lemon flavored Jello
1 c. sour cream
1 can (11 oz.) mandarin oranges, drained
1 can (8 oz.) pineapple tidbits, drained
Whipping cream and fresh mint leaves, optional as garnish

Dissolve orange Jello in 2 cups boiling water. In a separate bowl, dissolve lemon Jello in 2 cups boiling water. Pour 1/2 of orange gelatin in a small bowl and add sour cream; stir until well blended. Repeat for lemon Jello. Add mandarin oranges to remaining orange Jello. Add pineapples to remaining lemon Jello. Cover and chill until partially set. Pour orange-sour cream mixture evenly in 4 tall glasses. Layer mandarin orange mixture, lemon-sour cream mixture, and pineapple mixture evenly in glasses. Cover and refrigerate until set. Garnish if desired.
