RANCHO BEEF BAKE | |
1 lb. can beans in barbeque sauce 1 lb. can tomatoes, undrained 1 1/2 lbs. ground beef 1 c. mashed potato flakes 1 egg 1 pkg. onion soup mix 1/4 c. catsup 1 tbsp. Worcestershire sauce 1/4 tsp. pepper Combine beans and tomatoes in 13"x9" baking dish; spread evenly. Combine remaining ingredients; mix well. Shape into about 21 (1 1/2") balls. Arrange in 3 rows lengthwise on top of beans. Bake at 400 degrees for 20 minutes. Remove from oven. Drop biscuits (recipe below) by tablespoonfuls into two rows between meatballs. Bake 20 to 25 minutes longer. BISCUITS: 1 c. all purpose flour 1 tbsp. baking powder 1/2 tsp. salt 1 package (1 tbsp.) dry chili-cheese dip mix 1/4 c. cooking oil 1/2 c. milk Combine dry ingredients in mixing bowl. Add oil and milk; stir until moistened. Can use self-rising flour and omit baking powder and salt. |
