CHRISTMAS CORN BAKE 
2 eggs, beaten
2 c. (1 can) cream style corn
1 c. Minute Rice
1/2 c. finely chopped onions
1/2 c. finely chopped green peppers
1 can Rotel tomatoes and peppers
Cheese slices (enough to cover top of casserole)

Butter casserole dish. Mix the ingredients and bake covered at 350 degrees for about 1 hour. Remove cover and top with cheese slices during last 10 minutes of baking.
