FIVE STAR CHICKEN SALAD 
4 whole chicken breasts, boiled, cooled, boned and diced
1/2 c. water chestnuts, sliced
1/2 c. chopped pecans or cashews
1/2 c. seedless grapes
1/2 c. chopped celery
2 tsp. ginger
1 1/4 c. mayonnaise
2 tbsp. wine vinegar
2 tbsp. soy sauce
2 tbsp. chopped onion
1/2 tsp. curry powder

Mix water chestnuts, chicken, pecans, and grapes. Blend mayonnaise, vinegar, soy sauce, ginger and curry. Add onion and celery. Toss all with chicken mixture. Chill well. Serve a scoop of salad on a lettuce leaf. If desired, top with slices of hard boiled eggs and sprinkle with paprika. Serve to a friend and enjoy.
