SNICKERDOODLES 
1 c. butter
3/4 c. packed brown sugar
3/4 c. + 1 tbsp. sugar
2 eggs
1 3/4 c. flour
2 c. oatmeal
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt (opt.)

Wonderful cinnamon sugar cookies; soft on the inside, crisp on the outside. M-m-m.

Heat oven to 375 degrees. Grease cookie sheet. In large bowl beat together butter, brown sugar and 3/4 cup white sugar until light and fluffy. Add eggs, mix well. Add flour, oats, 1 teaspoon cinnamon, soda and salt; and mix well.

Drop by rounded teaspoonfuls onto greased cookie sheet. Sprinkle each cookie with a mixture of remaining 1 tablespoon sugar and 1 teaspoon cinnamon. Bake 8 to 10 minutes. Cool 1 minute on cookie sheet; remove to rack to finish cooling. Makes about 4 1/2 dozen cookies.

I was worried these would be more like a traditional oatmeal cookies but it really is a Snickerdoodle! I halved the butter and replaced it with butter flavor veggie crisco just so I could feel better about putting them in lunch boxes. Super yummy recipe and a nice change from using chocolate chips. Love that they contain the oats!
